Unstuffed Cabbage

One of my families ALL TIME FAVORITE recipes.  This is healthy comfort food that tastes NAUGHTY! Hubby and kids DEVOUR it! It tastes just like my grandma’s stuffed cabbage…but WAY easier to make. Enjoy!

I recommend doubling this recipe so you can have lots of leftovers but single recipe below should feed 4-6 people once. Wanna taste divine? Pour it over a healthy portion of homemade mashed potatoes. WHOA!! Or keep it carb free and serve over some cauli rice. Enjoy!

Recipe

Unstuffed Cabbage

Yield: 4-6 servings

Ingredients

1 lb. ground turkey or lean ground beef

1 medium sweet onion, chopped (1 large sweet onion if doubling)

2 bell peppers (optional if you want to add more veggies) green or red or one of each

1-10 oz.  bags of pre-shredded green cabbage (we use Trader Joe’s)

16 oz. of no salt added or low-sodium chicken broth (we use Pacific brand chicken bone broth)

1/2 tsp pepper

1/2 tsp sea salt

1 (14.5 oz) can diced tomatoes

1 (8 oz) can tomato sauce

2 cloves garlic, minced (we use jarred pre-minced when in a hurry!)

Instructions

1. In a deep skillet or cast iron dutch oven, brown the meat on medium high heat, drain and set aside.

2. Sautee’ chopped onions and cook until translucent, add garlic at the end…cook for about a minute.

3. To the pot, add cooked meat, cabbage, tomatoes, tomato sauce, broth, and spices and bring to a boil.

4. Reduce heat and cover for 1 hour or until cabbage is very tender.

 

Serving suggestions:

Serve over homemade mashed potatoes, brown rice, or cauliflower rice!

 

21 day fix container equivalents:

1 Red, 1 Green for 1 1/2 cups

Optional – 1 yellow for potatoes or brown rice
