Ultimate Vegan Gluten Free Blueberry Muffins

You would NEVER know that these muffins are gluten free AND egg free. My husband is allergic to both wheat and eggs but he loves baking, and he loves a great muffin with a cup of coffee in the morning. He was determined to develop not only a muffin that fit his food allergy requirements but tasted AMAZING, was moist, and was an excellent option for breaking an intermittent fast in the morning.

These are chock full of nutrients, very low in natural sugar, and will keep you satiated for a long time. He loves them, we love them…and we hope you all enjoy them too.

Ultimate Vegan Gluten Free Blueberry Muffins

Yield: 5 large muffins

Ingredients

DRY:

1/2 cup gluten free oat flour (we use old fashioned oats and make flour in the blender)

1/2 cup golden flax meal

1/2 cup blanched almond flour

1/2 cup cassava flour

1 tsp cinnamon

1/4 tsp salt

3/4 tsp baking soda

 

WET:

2 Flax eggs (mix 2 Tbsp flax meal with 1/3 cup water, let sit for 5 min)

1/2 cup almond milk (or dairy free milk of choice)

Scant 1/3 cup honey or pure maple syrup

1 tsp pure vanilla extract

1 Tbsp grapeseed oil (or any neutral oil)

1 tsp apple cider vinegar

 

ADD INS:

1 cup fresh or frozen blueberries

1/2 cup chopped walnuts

 

 

Instructions

  1. Preheat oven to 365 degrees.
  2. Use large muffin tin (not standard size muffins, got ours at Walmart), line with large muffin papers.
  3. Combine all wet ingredients in medium mixing bowl, stir to mix.
  4. Combine all dry ingredients in separate bowl, stir to mix.
  5. Pour dry ingredients into wet ingredients, stir with spatula to combine thoroughly.
  6. Fold in blueberries and nuts.
  7. Spoon and divide the batter into 5 of the muffin papers.
  8. Bake for 26 minutes until the tops are dark golden brown.
  9. ENJOY!
