This is undoubtedly one of the most popular dishes in Indian takeout and our family agrees! I thought this would be too spicy for the kiddos but it was PERFECT! It’s Indian comfort food that you will want to make weekly!
2 tsp ghee
1/4 cup onion
2 cloves chopped garlic
2 tsp yellow curry powder
1 tsp smoked paprika
1 dash each of cardamom, cinnamon, nutmeg, clove
1/2 tsp salt
1/4 tsp pepper
1 Tbsp tomato paste
1/4 cup low sodium chicken broth
1/4 cup almond milk
1/4 cup tomato puree
2 Tbsp Greek yogurt
1 1/2 lbs. cubed chicken breast or chicken thighs (personal preference)
1. In saucepan over medium-low heat, melt ghee and add onion and garlic. Sweat until translucent, no color on onions.
2. To the pan add all the spices and cook for a minute or two to toast and bring out flavor.
3. Add the tomato paste and cook for 1-2 minutes to get raw flavor out.
4. Add chicken broth, almond milk, tomato puree, yogurt and whisk and simmer for 3 minutes.
5. Add raw chicken and gently cook until chicken is just done.
6. If the sauce is too thin, you can add a slurry of 2 tsp. cornstarch and 2 tsp. water to thicken.
7. Serve over brown rice or cauliflower rice! Enjoy!!
