This makes one BIG 13×9 pan of banana bread. You can half the recipe and make in a loaf pan or make muffins if you want. Cooking time will be slightly less.
This makes one BIG 13×9 pan of banana bread. You can half the recipe and make in a loaf pan or make muffins if you want. Cooking time will be slightly less.
2/3 cup melted coconut oil
1/2 cup pure maple syrup (or raw honey)
1/2 cup coconut palm sugar or organic brown sugar
4 eggs (vegan option: use 4 flax eggs instead)
6 medium bananas (for BEST flavor freeze when really ripe, then thaw and mash, about 2 cups)
1/2 cup unsweetened almond milk, or any milk of your choice
2 tsp pure vanilla extract
Dry:
2 1/4 cups all purpose gluten free flour (we use King Arthur Measure for Measure or Walmart Great Value for best results)
1 1/4 cups almond flour (can use all GF flour for nut free)
2 tspĀ baking soda (we use Bob’s Red Mill for best results)
3/4 tsp Himalayan pink salt or sea salt
1 tsp ground cinnamon
1 cup chopped walnuts (can omit for nut free)
(Optional): thinly sliced ripe bananas to cover top of bread.
1. Preheat oven to 325 degrees F and line a 13×9 pan with parchment paper (or grease)
2. In a large bowl, beat the oil, maple syrup, and coconut sugar together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas, milk, and vanilla extract.
3. In a separate bowl, combine the flours, baking soda, salt, cinnamon, and nuts.
4. Lastly, add the dry ingredients to the wet and stir until just combined. Some lumps are ok!
5. Pour the batter into your pan and cover with thinly sliced ripe bananas.
6. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean and the overall bread looks deeply brown on top and the bananas are caramelized. You don’t want to undercook or it will be gummy in the center. Crusty edges are OK!
7. Cool on wire rack and ENJOY!! Go ahead and put a pat of grass-fed butter on top if you’re looking to be daring. LOL!
