Oat Bran Muffins

Don’t let the name fool you…these are our FAVORITE muffins! They are super moist, hearty, just sweet enough, and are the PERFECT pleasure for morning coffee or afternoon tea.

There’s no junk in here and they won’t derail your food plan. Life is about balance so go ahead…make muffins!!

Recipe

Oat Bran Muffins

Ingredients

2 cups oat bran*

1 cup all-purpose/GF flour

1 cup whole milk/unsweetened almond milk

2 tsp apple cider vinegar

1 egg

1/2 cup melted coconut oil

1/2 cup organic brown sugar (tip: make your own by adding 1 tsp molasses to 1 cup sugar, incorporate with a fork)

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp sea salt

1 heaping cup chocolate chips or blueberries (optional)

*Usually found in the hot cereal section and/or next to the granola at the grocery store.

Instructions

1. Preheat oven to 350 F. Add apple cider vinegar to milk and set aside.

2. Combine all remaining ingredients in a large bowl. Once milk has curdled, add to bowl and stir until no dry spots remain. Scoop batter into muffin tin with liners. Muffin cups will be very full.

3. Bake for 30 minutes, until a toothpick inserted in the center comes out clean. Remove from oven and allow muffins to cool for 10-15 minutes before removing from muffin tin, then allow to cool completely on a cooling rack before serving.
