No Bake Peanut Butter Power Balls

I like them best frozen! The kids helped make this recipe! These healthy treats were so nice to have for them all throughout the week to grab for a snack. Careful, they’re a little too good!

No Bake Peanut Butter Power Balls

Yield: 20-24 balls

Ingredients

1 cup GF old fashioned oats
1/2 cup crunchy peanut butter
1/3 cup honey, maple syrup, or agave
1 tsp vanilla extract
1/2 cup shredded, unsweetened coconut
1 Tbsp chia seeds
1/2 cup mini chocolate chips

Instructions

1. In a large mixing bowl, mix together all ingredients.
2. Refrigerate the mixture until firm enough to roll into balls.
3. Roll the dough into 1 oz. balls. Refrigerate or freeze until firm before serving.
*These bites can be kept refrigerated in an airtight container for up to 2 weeks. They also freeze well for up to 3 months. Thaw overnight in the fridge before eating.
