Huber Family Favorite Pancake Recipe

This is our families FAVORITE pancake recipe.  They are gluten free, moist, and packed with protein and healthy oils. We usually make a double batch on the weekend and then we’ve got an easy quick and healthy breakfast for the kiddos during the week! Trust me….they don’t last long!!

Huber Family Favorite Pancake Recipe

Yield: 5 servings

Ingredients

1/2 cup unsweetened almond milk

1/2 cup Greek yogurt

2 eggs

2 Tbsp coconut oil, melted

1 tsp vanilla

1 cup oat flour (put old fashioned oats in blender to make flour)

2 tsp baking powder

1/2 tsp salt

Instructions

Combine all wet ingredients. then add flour and salt to wet mixture.  Mix thoroughly.  Add baking powder and gently mix in…watch the batter foam up.  This thickens the pancakes and provides a nice fluffiness. Fry the pancake in a little bit of coconut oil or grass-fed butter like Kerrygold.  Serve with fresh berries, a tiny drizzle of pure maple syrup, applesauce, or just plain.  Enjoy!
