Custardy Fruit Clafoutis

Dive into this delicious dessert with ZERO guilt! it’s made with healthy almond flour so it feels like the perfect “treat” and you can still stay on track! This is a breakfast/tea time/dessert fave in our family and goes great with a cup of coffee or tea. From our family to yours, ENJOY!

Custardy Fruit Clafoutis

Yield: Serves 8

Ingredients

Sliced fruit of your choice, best with plums, plumcots, peaches, nectarines, cherries, or grapes.

4 large eggs

1 cup unsweetened almond milk

1/2 cup almond flour (or any gluten free flour)

1/4 cup gluten free cornstarch or tapioca starch

1/4 cup pure maple syrup (or honey)

2 Tbsp melted coconut oil (or oil of your choice)

1 tsp pure vanilla extract

1/4 tsp almond extract (optional)

1/4 tsp salt

Instructions

1. Preheat oven to 350 degrees

2. Lightly grease 9 inch glass pie plate

3. Combine all of the ingredients except the fruit in blender and process until thoroughly blended, mixture will be similar to crepe batter.

4. Pour mixture in pie plate

5. Arrange fruit lightly on top of the batter.

6. Bake for 45-50 min, until nicely puffed and golden brown

7. Remove from oven and let cool, refrigerate to cool completely.

8. ENJOY!
