Cheesy Chicken & Broccoli Casserole

Lovely comfort food from my family to yours! I replaced the traditional white rice with cauli rice to make this low carb and FULL of veggies. Trust me nobody will even know! It’s easy to make, moist, creamy, cheesy…and makes a fantastic dinner that the whole family will devour.

Cheesy Chicken & Broccoli Casserole

Yield: 4 servings

Ingredients

4 cups of cauliflower rice, thawed if frozen

4 cups of broccoli florets

2 lb. of chicken tenderloins, cut into bite sized pieces

8 tsp of rice flour or gf flour blend

8 tsp butter or ghee

2 cups unsweetened almond milk

2 cups shredded cheddar cheese, divided

Instructions

1. Preheat your oven to 350 degrees and lightly spray a casserole dish with olive oil. Add cauliflower rice to the bottom of the dish and sprinkle with a pinch of sea salt.

2. Next, add the chicken and, again, sprinkle with a pinch of salt. Add in broccoli next. Set casserole dish aside.

3. For the cheese sauce, in a large skillet, melt butter over medium heat. Sprinkle in the flour and whisk together. Slowly whisk in the almond milk, and continue to whisk until the mixture comes to a boil and begins to thicken. Once thickened, remove sauce from heat and stir in 1-1/2 cups of cheddar cheese until fully melted, adding salt to taste.

4. Pour cheese sauce over casserole, using a rubber spatula or spoon to spread out the cheese. Top with remaining 1/2 cup cheese and place in the oven for 45 minutes or until cheese starts to bubble. Enjoy!
