Butternut Squash Pizza

🍕This is a GO TO lunch or dinner in our house. So good and easy for weightloss! Who says you can’t have your pizza and eat it too!

Recipe

Butternut Squash Pizza

Ingredients

1/2 of a spaghetti squash, cooked
1 egg
1 tsp garlic powder (or 1-2 garlic cloves, minced)
1 pinch of salt
Black pepper to taste
1/4 C marinara sauce (optional)
1/2 C shredded cheese
salt to taste
toppings of your choice (I love grilled chicken, red onion, pickled jalapeƱos)

Instructions

To make the crust:
1. Poke your whole spaghetti squash with a fork all around, microwave for 2-3 min to soften. Cut squash in half long way, scoop out seeds, return to microwave and cook for 4-6 minutes until soft.
2. Scrape squash and give it a rough chop.
3. In a mixing bow, beat one egg, add seasonings, squash and mix.
4. Transfer wet mixture to a lined pizza pan (parchment/foil). Spray with oil of choice. Press crust into the shape of the pan making it as a thin as possible.
5. Bake at 400 for 15-20 min.
6. Prepare “toppings” while crust is baking. (Chicken, pepperoni, turkey, jalapeƱos, veggies)

To finish pizza:
1.Remove baked crust from oven and top with sauce of your choice. You can use traditional marinara sauce or even a favorite salad dressing!
