Another Huber family favorite! This dish is SO comfy, filling, and satisfying. You will NEVER miss the pasta! Eat Italian guilt free and count this as a protein, veggie, and healthy fat. Enjoy!
1-1/2 medium butternut squashes, peeled and cubed (roughly 4-5 cups)
1 large sweet onion, chopped
2 tsp olive oil
3 cloves of garlic, minced
2 lbs. ground beef or turkey (96/4)
2-28oz. cans crushed tomatoes, no salt added
2 1/2 cups 2% or low fat ricotta cheese
1 egg
Himalayan pink salt or sea salt
freshly ground pepper
Parmesan cheese
1. Roast, steam, or boil butternut squash until done.
2. While squash is cooking, sautee onion in olive oil until translucent, add garlic last 30 seconds or so of cooking. Remove from heat and transfer to bowl.
3. Sautee beef or turkey until brown, drain. Add back to pan with onion/garlic mixture.
4. Add crushed tomatoes, salt, and pepper to taste. Simmer on medium until a lot of the water evaporates and sauce is thickened to your liking.
5. In a small mixing bowl, add ricotta, egg, and about 1/2 tsp salt and pepper to taste. Mix thoroughly.
5. Using a relatively deep 13×9 pan, add 1/2 of the meat sauce mixture, then all the squash, then all of the ricotta mixture (spread evenly over squash), then the rest of the sauce. Sprinkle top lightly with parmesan cheese.
6. Bake on middle rack of oven at 375 degrees for about 25-30 min or until edges and center are bubbling. ENJOY!
