Morning Bliss Waffles

These waffles are my FAVE and SO SO good! Toasty, fluffy, sweet, chewy, PERFECT with my morning coffee, oh and ZERO added sugar. What more does a girl need!

Enjoy with grass fed butter, fruit or peanut butter!  I prep all the waffles and then keep them in my fridge all week.  They reheat in the toaster perfectly! I reworked this recipe many times until I got it just right.

Recipe

Morning Bliss Waffles

Yield: 8 waffles

Ingredients

1 cup oats

1 cup almond flour

1 cup unsweetened almond milk

1/2 cup walnuts

2 eggs

3 ripe bananas (the more ripe the sweeter)

2 tsp pure vanilla extract

2 tsp cinnamon

2 tsp baking powder

dash of pink Himalayan salt

1 1/2 Tbsp coconut or avocado oil

Instructions

1. Preheat waffle maker and spray with olive oil.

2. Blend all ingredients except walnuts in a blender until almost smooth. Add walnuts after blending.

3. Pour 1/2 cup of batter into waffle maker and cook.

TIP: My BEST results were using a deep pocket Belgian waffle maker and cooking it much longer than a traditional waffle…roughly 8 minutes, but it’s worth it. You’re shooting for really crispy on the outside and still a bit chewy on the inside. It’s an amazing texture that you must try. Just play around with your waffle maker and cooking times until you like it.

Serving size is 1/2 C batter; Recipe makes 8 waffles.
