1. Preheat waffle maker and spray with olive oil.
2. Blend all ingredients except walnuts in a blender until almost smooth. Add walnuts after blending.
3. Pour 1/2 cup of batter into waffle maker and cook.
TIP: My BEST results were using a deep pocket Belgian waffle maker and cooking it much longer than a traditional waffle…roughly 8 minutes, but it’s worth it. You’re shooting for really crispy on the outside and still a bit chewy on the inside. It’s an amazing texture that you must try. Just play around with your waffle maker and cooking times until you like it.
Enjoy with fruit or peanut butter! I prep all the waffles and then keep them in my fridge all week. They reheat in the toaster perfectly fine!
Serving size is 1/2 C batter; Recipe makes 8 waffles.
